Ingredients

Directions

1. Spray large pan with low calorie oil. Add diced chicken and stir fry for 5 minutes until browned.
2. Add onions and peppers and cook for 3 minutes.
3. Add garlic, chorizo and a splash of water. Cook for 2 minutes.
4. Stir in rice, followed by tomatoes and stock. Reduce heat to a gentle simmer and cook stirring occasionally for 25-30 minutes.
5. Add prawns and cook for 5 minutes until hot.
