Preheat oven to high. |

Peel the garlic and zest the lemon. |

Put the crackers in a food processor with the butter, garlic, parsley, lemon zest and some salt and pepper. Whiz until very fine and pour onto a plate. |

Sprinkle the flour onto another plate. Crack the egg into a bowl and beat with a fork. |

Cover the pork with cling film and bash a few times with the bottom of a pan until the pork is quite thin (skip this if using thin cut chops). Dip the pork in the flour until both sides are completely coated, then dip into the egg and finally into the crumbs. Push the crumbs onto the meat so they stick. |

Place the pork on a foil covered baking tray and cook for 15 minutes. |
