  1. Heat oven to 180 °C, roll out pastry and line 26 cm flan dish.
  2. Cream together sugar, flour, eggs, butter, almonds and vanilla extract.
  3. Spread jam in bottom of pastry case.
  4. Bake for 45 minutes, check for browning too quickly and cover with foil if needed.
  5. Check cooked through with a skewer or knife in the middle.
