Directions

1. Preheat grill to high. In a small bowl combine the coconut oil, lemon juice, spices, salt and pepper.
2. Slice the salmon into bite-size pieces. Add the salmon to the bowl and coat the salmon in the marinade.
3. Create 3 skewers alternating salmon, tomatoes and mushrooms.
4. Grill until cooked.
