Directions

1. Prepare your vegetables by washing them and cutting them.
2. Grill or fry into another pan the courgettes and aubergines for 10 min.
3. Into a pan fry with 3 tbsps of oil the rest of the vegetables on low heat for 30 min or until they soften. Season with coriander seeds, salt and pepper and add all the vegetables together.
4. Turn off the heat and sprinkle with fresh coriander.
