Bring pasta to the boil and simmer until cooked. |

Whilst pasta is cooking, mix tuna in a bowl with 1 tablespoon mayonnaise. |

Chop spring onion and peppers. |

Drain the pasta and put into a casserole dish. Add the tuna and vegetables to the warm pasta and mix. |

Add the last tablespoon of mayonnaise and season to taste. Mix again and eat as it is or refrigerate for a cool pasta dish later. |

Note: try adding sweetcorn, spinach, cucumber, tomatoes or whatever your imagination can think of. Best made in advanced and eaten when cooled. |
