A vegan cabbage stew.
1/4 cup sunflower oil
1 tsp paprika
1/2 <span class="measurestring" title="head, medium (about 5-3/4" dia)">head medium</span> cabbage
1 cup carrots, chopped
3 cloves garlic
1 cup onions, chopped
2 tbsps tomato paste
Chop and slice all vegetables.
Add oil to the pan.
Sweat all vegetables in the pan adding first onion, then cabbage and carrots.
Once softened, add tomato paste and two cups boiling water and leave to simmer for about 20 minutes.
Add salt, pepper and paprika to taste.
When cabbage is soft, take off the heat and add mashed garlic.
Leave to cool for 10 minutes then enjoy.
