Directions

1. Cut all ingredients and place them in a large pot.
2. Add water to cover them and then 2 cups more. Add salt and pepper.
3. Bring to a boil then turn the heat to low-medium and simmer for 50 minutes to an hour.
4. Note: add other spices of your choice. You can add cream or croutons, but be careful as these increase the number of calories considerably.
