Directions

1. Mix flour, baking powder, cornflour and salt together.
2. In another bowl, melt the butter then add the brown sugar and granulated sugar. Mix until there are no lumps.
3. Whisk the egg and the egg yolk into the wet mix and then add the vanilla extract.
4. Pour the wet ingredients into the dry ones and mix with a large spoon or spatula. The dough will be very soft but thick.
5. Fold in the chocolate chips. Cover the dough and chill in the fridge for at least 2 to 3 hours.
6. Take the dough out of the fridge and let it soften slightly at room temperature for 10 minutes.
7. Preheat oven at 160 degrees for a fan oven. Line baking sheets with greaseproof paper. Roll the dough into tall balls.
8. Bake for 12-13 minutes. Leave them on a baking sheet for 10 minutes after taking them out of the oven. Then transfer them to cooling racks and place them into an airtight container when completely cooled.
