1. Braise the meat in olive oil, then remove it and set aside. Use the same olive oil to braise the vegetables a bit, then remove it and set aside.
2. Add the spices and seasonings to the olive oil left in the pan, then add 1/3 of the water and stir until you can see that there are no more juices left stick to the pan.
3. Add the vegetables and the meat, and let it cook in slow temperature for 2 hours, taste and add more salt if needed.
