Directions

1. Dice onions, celery and pepper. Add to pan with a little olive oil.
2. Slice chorizo and add into softened vegetables.
3. Fry until the chorizo starts releasing oils.
4. Add in spices, butter beans and chopped tomatoes.
5. Cook until thickened, tasting and adding salt and pepper as needed.
6. Add in a few large handfuls of spinach, and stir in until wilted then serve immediately.
