Directions

1. Heat margarine in a pot. Cook onions and leeks for 5 minutes, or until glassy.
2. Add potatoes and stock. Bring to a boil.
3. Reduce heat, cover and simmer for 20 minutes, or until potato is soft.
4. Blend. Season with salt and pepper.
5. Garnish with chives.
