Chop vegetables and peel and grate the carrots. |

Prepare the noodles according to the pack instructions. Drain, rinse with cold water and set to one side. |

Butterfly the chicken, then slice it into three strips. |

Heat the wok on medium-high and add 1 tbsp stir fry oil. Wait until it starts smoking then add chicken. |

Fry chicken, stirring frequently, until golden brown on the outside. |

Add vegetables and continue to cook for 1-2 minutes. |

Add sauce and reduce heat to medium. Let simmer for 1-2 minutes. |
