Hoisin Chicken Stir Fry

Chicken and vegetable stir fry with hoisin sauce and egg noodles.

Directions

1. Chop vegetables and peel and grate the carrots.
2. Prepare the noodles according to the pack instructions. Drain, rinse with cold water and set to one side.
3. Butterfly the chicken, then slice it into three strips.
4. Heat the wok on medium-high and add 1 tbsp stir fry oil. Wait until it starts smoking then add chicken.
5. Fry chicken, stirring frequently, until golden brown on the outside.
6. Add vegetables and continue to cook for 1-2 minutes.
7. Add sauce and reduce heat to medium. Let simmer for 1-2 minutes.
8. Add noodles and continue stirring for a couple of minutes, then serve.
